Set SayIt as the default assistant: hold the power button to start, hold again to stop. The first launch walks you to the system setting.
The final draft needs a network connection and a PlutoKeating account (id.plutokeating.beer ). Recording, the rough draft, reading back and export do not.

No iOS version is planned.
